Eureka Township is a township located in Dakota County, Minnesota. As of the 2000 census, the township had a total population of 1,490.

Geography
According to the United States Census Bureau, the township has a total area of 92.9 km² (35.9 mi²). 91.6 km² (35.3 mi²) of it is land and 1.3 km² (0.5 mi²) of it is water. The total area is 1.42% water.

The racial makeup of the township is 97.99% White, 0.00% African American, 0.27% Native American, 0.34% Asian, 0.00% Pacific Islander, 0.54% from other races, and 0.87% from two or more races. 1.14% of the population are Hispanic or Latino of any race.
